What Happened to the Lemon Twist? It is rare to find a Bartender or Server who truly knows the purpose and execution of this small, but powerful garnish. Upon receiving a cocktail with an improper twist procedure, I submerge my digits into the icy depths and retrieve my lemony friend. Twisting from right to left , yellow side down, I release the essence of the lemon onto the surface of my libation. Without a second thought, I rim the glass with the glistening lemon oils that are left behind on the outer rind of the twist. What was once a cocktail with a lemon rind carelessly thrown in, is now an aromatic masterpiece!! Have our lives, in the service industry, become so fast paced that we can not execute a five second procedure? In my view, five seconds is the difference between mediocrity and greatness! I will gladly wait five extra seconds for my martini!!!
